Semi Homemade Veggie Tikki Masala

  • 1 cup basmati rice
  • 2 cups water
  • 1 tbsp extra virgin olive oil
  • 1/2 large yellow onion, diced
  • 2 cloves minced garlic
  • 2 – 12.5 oz jars Tikki Masala sauce (Maya Kaimal brand is what I used from Target)
  • 1 cup thinly sliced carrots
  • 1 – 10 oz bag cauliflower florets (chopped into smaller florets)
  • 1/2 can coconut cream
  • 1/2 can chickpeas, rinsed and drained
  • 1/2 cup frozen peas
  • 1 tsp salt

Bring 2 cups water and a pinch of salt to a boil and add in basmasti rice. Cover and reduce to a simmer for 15 minutes until cooked. Set aside and leave covered.

Heat 1 tbsp extra virgin olive oil in a large pan. Once hot, add in onion an sauté (mix frequently) for 10 minutes until soft.

Add in minced garlic and saute’ for 30 seconds just until fragrant.

Add in both jars of Tikki Masala sauce.

Stir until sauce and onions/garlic are incorporated.

Add in carrots and cauliflower florets.

Add in coconut cream.

Mix, cover and simmer for 15 minutes on medium/low until veggies are cooked through and softened.

Add in checkpeas and frozen peas. Cook uncovered for 5 minutes, stirring frequently.

Add in salt to taste.

Serve the rice in a bowl with veggie masala. Enjoy!
