One Pot Creamy Lemon Spinach Pasta
One pot creamy lemon pasta
- 3/4 of a box Collezione spaghetti (Barilla brand)
- Juice of 1 lemon (if lemon is very large, use only half of lemon to juice)
- 3 cloves garlic, minced
- 1/4 cup diced yellow onion
- 3 cups rganic low sodium chicken broth
- 1/2 Cup of heavy whipping cream
- 1 cup fresh spinach
- 1/4 cup white cooking wine
- 1/4 cup freshly grated parmesan cheese + 1/4 cup for garnish
- 2 tbsp unsalted butter
- 1 tbsp Olive oil
- 1 tsp salt and pepper + more to taste
Melt 2 tbsp of unsalted butter and 1 tbsp extra virgin olive oil in a large pan over medium heat. Once hot, add in the onion and saute for about 5 minutes until it starts to soften. Add in the minced garlic and saute for 30 seconds until fragrant (you don’t want to burn the garlic). Add 1/4 cup white cooking wine and turn heat to high. Cook for 2 minutes to burn off the wine. Turn heat back down to medium and add juice of 1 lemon (1/2 of a lemon only if your lemon is extremely large).
In separate bowl, whisk together 1 tbsp corn starch with 2 tbsp of water until its fully incorporated and smooth.
Add the corn starch mixture to the pan and mix. You’ll notice the sauce starts to become thick. Then add in 3 cups of the chicken broth and 1/2 cup of heavy whipping cream.
Bring your liquid to a boil and add the spaghetti (I break the spaghetti stands in half before putting into the liquid so that way I can ensure the liquid covers the entire spaghetti strand).
Constantly stir the spaghetti for the first 1-2 minutes so that it doesn’t stick to the pan.
Then, bring your heat level down to a 5 (medium) and simmer for the remaining 10 minutes (or however long your box of pasta instructs for “al dente”). If your pasta soaks up all of the sauce too quickly, add 1/4 more at a time of water or chicken stock as needed.
Once the pasta has finished cooking, turn off the heat. Add salt and pepper (add more to taste if needed).
Add in the fresh spinach and mix until wilted to incorporate.
Add in the freshly grated parmesan cheese and mix to incorporate.
Garnish with more freshly grated parmesan cheese. Enjoy! 🙂
