Cauliflower Gnocchi Mac and Cheese

Ingredients:

  • 2 bags Trader Joe’s cauliflower frozen gnocchi
  • 1 tbsp extra virgin olive oil
  • 3 tbsp water
  • 2 tbsp unsalted butter
  • 1 tbsp flour
  • 1.5 cups whole milk
  • 1 tsp salt (more to taste)
  • 1 tsp pepper
  • 1 cup shredded cheddar cheese
  • 2 tbsp freshly grated Parmesan cheese
  • 2 tbsp freshly grated Asiago cheese

Heat 2 tbsp butter in a sauce pan over medium high and once melted, whisk in the flour until fully dissolved into the butter. The mixture should be bubbling. Immediately add half of the milk to the pan, whisking continuously. Add the rest of the milk in and whisk. Turn the heat down to low and let cook for 5 minutes. Turn off the heat and add in shredded cheddar cheese, Parmesan and Asiago. Add salt and pepper and taste your sauce in case you’d like more seasoning. Leave on lowest heat setting possible while you cook the gnocchi.

In large pan over medium high heat, heat up 1 tbsp of extra virgin olive oil. Once hot, add in the frozen gnocchi (no need to defrost) – be careful! The oil may splatter when the frozen hit the hot pan. Cook the gnocchi for 3 minutes and then flip them over to brown the other side for 1 minute. Add 3 tbsp of water to the pan and cover for another 5 minutes until the gnocchi is steamed and cooked through.

Remove the gnocchi to a bowl, pour the cheese sauce over and mix to incorporate.
