15 Minute Fire Rossted Red Pepper Pasta

- 1 box Rigatoni pasta (I used Barilla)
- 1 tbsp unsalted butter
- 1, 12 ozglass jar Trader Joe’s fire roasted red peppers (you can use any brand)
- 1 cup freshly grated Parmesan cheese + 1/2 cup for garnish
- 2 tbsp chiffonade fresh basil
- 1 tsp salt
- 1 tsp black pepper
- 1/2 tsp crushed red pepper flakes
Heat large pot of salted boiling water.
Once boiling, add in the pasta and cook according to al dente time on the box.
While the pasta is cooking, using a Bullet blender (this is what I used) or food processor, empty the jar of roasted red peppers in (including liquid). Add the salt, pepper and crushed red pepper flakes. Turn on the blender for 30 seconds until puréed and smooth.
Still while the pasta is cooking, using a deep serving bowl, add the red pepper sauce to the bottom of the bowl. Add the 1 tbsp of butter. Also add 1/2 of the basil. Add 1 cup Parmesan cheese.
When the pasta is al dente, strain and add the pasta directly to the bowl.
Mix until cheese/butter is melted and all is incorporated.
Top with the other 1/2 cup freshly grated Parmesan cheese and remaining fresh basil.
